Ingredients

  • 1 package dry yeast
  • 1/4 cup warm water
  • 1/3 cup margarine, melted
  • 1 cup sour cream
  • 1/4 cup sugar
  • 2 eggs
  • 1 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 cup flaked coconut
  • 2 teaspoons grated orange rind
  • 2 tablespoons butter or margarine

  • Orange glaze -
  • 1 cup confectioners sugar
  • 1 tablespoon grated orange rind
  • 1 tablespoon orange juice

Preparation

Step 1

In a large mixing bowl, dissolve yeast in warm water. Add the next 5 ingredients, mixing well. Gradually stir enough flour to make a soft dough. Mix well. Place dough in a greased bowl; turn to grease top. Cover and let rise in a warm place until dough is doubled in bulk.

Combine sugar, coconut and orange rind. Set aside. Punch dough down. Turn out onto a floured surface. Knead until smooth and elastic. Divide dough into half. Roll each half into a rectangular shape.

Brush with melted butter. Sprinkle with coconut mixture. Roll up from long side. Cut into 1-inch pieces, turn on end and place into greased muffin tins. Cover with a piece of wax paper and let rise until doubled.

Bake in preheated 250 degree oven for 15-20 minutes. Do not brown. While still warm, drizzle with glaze.

Orange Glaze:
Mix glaze ingredients together. If too thick, add more orange juice.
