Ingredients

  • 1 box Barilla Tri-Color Penne
  • 6 T Olive Oil
  • 1 clove garlic, minced
  • 2 pints cherry tomatoes, halved (red and yellow)
  • 1/4 cup chives, minced
  • 2 4 oz. balls fresh mozzarella, cubed
  • 2 cups lightly chopped baby arugula
  • 2 T lemon juice
  • 1/4 cup Parmesan cheese
  • salt and pepper

Step 1

1.) Bring large pot of water to a boil, season with salt.

2.) Meanwhile, in a small skillet saute garlic in 2 T olive oil until slightly yellow in color; set aside to cool.

3.) Add pasta to boiling water. Cook for 1 minute less than required package instructions. Drain pasta and toss with 1 T olive oil; place pasta on sheet tray to cool down.

4.) In a large bowl, combine cherry tomatoes, chives, mozzarella and arugula, season with salt and pepper.Toss with remaining olive oil, garlic and lemon juice to combine.

5.) Add pasta, sprinkle with Parmesan cheese and toss again. Let rest for 30 minutes before serving.
