Homemade Animal Crackers

Ingredients

• 1/3 cup unsalted butter, room temp.
• 1/3 cup sugar
• 1 egg
• 3 T honey
• 2 cups whole wheat pastry flour
• 1 tsp baking powder
• 1/4 tsp salt

Preparation

Step 1

Place butter and sugar in mixing bowl. Cream until light and fluffy. Add egg and honey and blend well. In another bowl, whisk together the flour, baking powder, and salt. With the mixer on low, add flour mixture one third at a time, blending well. If too soft, add more flour, up to 3 T.

Heat oven to 350 and line baking sheets with parchment. Place dough between parchment sheets and roll to a 1/8 inch thick circle. Form the dough into shapes using mini animal-cookie cutters. Place on baking sheets, 1/2 inch apart.

Bake until edges begin to brown, about 10 min. Let cool on sheets for 10 minutes, and then transfer to cooling rack to completely cool.
