Pizza (Grilled)

This is a New York Style thin crust pizza. Can be made in the oven or on the BBQ grill.

Ingredients
- Add:
- 16 1/2 oz. bread flour
- 2 t. sugar
- 1/2 t. yeast
- 1 1/3 c. ice cold water
- 10 in food processor and let rest 10 min.
- 1 1/2 t. salt
- 1 T. vegetable oil
- 30-60 30-60 seconds until it comes together. It should be satiny and sticky.
- Pizza sauce:
- 28 oz. whole stewed tomatoes
- 1 T. olive oil
- 2 cloves garlic
- 1 t. salt
- 1 t.oregano
- 1/4 t. black pepper
- 1 t. red wine vinegar (Pompeian)
- 1 in food processor or blender and refrigerate at least 1 hour.

Preparation
Step 1
Place vegetable oil on the counter. Knead dough a few minutes on the oiled surface and form into a tight ball. Place into a greased bowl and cover tightly with plastic wrap sprayed with Pam. Place in fridge for 24 hrs and up to 3 days. (More flavor develops with longer time in the fridge)
Divide dough into 2 tight balls and place on greased baking sheet and cover with plastic. Rest on counter for 1 hour (dough will slump). If is is still too tight and shrinks back when stretched, let rest a little longer (5-10 min)
Place stone in the 2nd to the top position of the oven and preheat to 350°. Or heat grill.
Dust ball of dough and counter with a generous amount of flour. Pat to shape in a 12 inch circle with a "handle" around the edges. Pull and stretch dough on a pizza peal to transfer pizza to oven or grill.
Add the sauce leaving a 1/4 inch border. Add 1/4 c parmesan cheese and 1 cup mozzarella cheese and whatever toppings you prefer and bake in 500° oven till done, about 10-12 minutes
