Ingredients

  • 1 Large Head of Cauliflower
  • 1/2 Can of Cream of Chicken Soup
  • 1/2 Can of Cream of Mushroom Soup
  • 1 Cup Sharp Cheddar Cheese - Shredded
  • 2 Ribs of Celery - Chopped
  • 2 Packages of Tuna
  • 3/4 Can of Green Beans
  • 4 Tbs of Fried Onions
  • 1 Tbs. Minced Garlic
  • Salt and Pepper

Preparation

Step 1

Preheat oven to 400*

Steam the cauliflower in 1 inch of water in a covered pot. Steam until fork tender - About 15 minutes

In a large mixing bowl, combine the cream of chicken, cream of mushroom, garlic , and salt and pepper.

Fold in celery, green beans and tuna.

When the cauliflower is tender, drain all water and leave it in the hot pot. This will help remove excess water from the cauliflower and save you from ending up with soup instead of casserole

In a glass baking dish, fork mash the head of cauliflower until it creates a thick layer covering the entire baking dish

Layer soup mixture on top of the cauliflower. Using a fork, poke through the mixture in several spots to allow some of the mixture to blend in with the cauliflower

Bake for 20 minutes

Layer the cheese on top and bake for 10 more minutes

Layer fried onions on top and bake for 10 more minutes
