Ingredients

  • 8 ounces linguine, uncooked
  • 2 medium tomatoes, seeded and chopped
  • 1 medium onion, chopped
  • 1 medium zucchini, sliced
  • 1/4 cup fresh parsley, snipped
  • 1 tablespoon olive oil
  • 2 garlic cloves, pressed
  • 1 teaspoon each: dried basil and oregano leaves
  • 1/8 teaspoon each: salt and ground black pepper
  • 1 ounce (1/4) fresh Parmesan cheese, grated
  • Italian sausage, cut into 1 inch pieces

Step 1

Cook linguine according to package directions. Drain and keep warm. Chop tomatoes and onion. Slice zucchini. Snip parsley. Heat oil in a stir fry skillet over medium heat until hot. Press garlic into skillet. Add Italian sausage and stir fry about 3 to 4 minutes. Stir fry for 15 seconds. Add zucchini an onion; stir fry 2 to 3 minutes until vegetables are crisp-tender. Add tomatoes, parsley, and seasonings. Heat 1 to 2 minutes, stirring gently until heated through. Remove fro heat. Stir in linguine. Grate Parmesan cheese over pasta. Serve immediately.
