Pea Soup (Andersen's)

This recipe is adapted from Andersen's split pea soup. They don't put the ham in, but I think it improves it.

Ingredients

  • 2 qts water
  • 2 c green split peas
  • 1 stalk celery
  • 1 large carrot
  • 1 med onion
  • 1/4 t ground thyme
  • 1 pinch cayenne
  • 1 bayleaf
  • salt
  • pepper
  • 1 honey ham bone

Cooking time 240mins

Step 1

Put peas in water and boil hard for 20 minutes. Add remaining ingredients and reduce heat and cook for a few hours. Monitor liquid to ensure it doesn't get too dry and stir occassionally to prevent burning.

This is really good served with cornbread.
