Sesame Kale & Red Cabbage Stir-Fry Recipe

Ingredients
- 1 bunch kale, any variety
- 1/2 small head or 1/3 medium sized head red cabbage
- 1-2 Tbsp. water, to sauté (I like to use leftover bean cooking liquid from my bi-weekly pressure cooking bean fest!)
- 1 medium red onion, quartered and thinly sliced
- 2 tsp. grated fresh or jarred ginger (I always use fresh and I add in a little extra)
- 1 Tbsp. dark sesame oil
- 1-2 Tbsp. sesame seeds (preferably unhulled)
- Freshly ground pepper, to taste

Step 1
1. Strip the kale leaves from the stems. Stack a few leaves and cut them into narrow strips. If desired, slice the stems into thin slices and use in the stir fry, otherwise discard.
2. Cut the red cabbage into thin slices about 2 inches long.
3. Heat your water/bean liquid (for sauté) in a large skillet. Add the onion and sauté over medium heat until golden and soft, adding more water as you go to keep them from sticking.
4. Add the ginger, kale and cabbage. Turn the heat up to high and stir-fry for 2-3 minutes, stirring frequently and adding liquid as needed, until both are brightly colored and tender-crisp.
5. Remove from the heat. Stir in the dark sesame oil and the sesame seeds. Season with fresh ground pepper and serve immediately.
