Ingredients

  • 2 T unsalted butter
  • 1 large sweet apple, peeled, cored, and cut into 1/4 inch wedges (Gala or Golden are great)
  • 1/2 c whole milk
  • 1/2 c flour
  • 4 eggs
  • 3 T sugar
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • Confectioners' sugar

Preparation

Step 1

Position rack in middle of preheated 450 oven. Melt butter in a medium skillet over medium heat, then transfer 1 T to a blender. Add the apple wedges to the skillet and cook, turning once until they start to soften 3 to 5 minutes. Arrange wedges around the edge of skillet. Meanwhile mix milk, flour, eggs, sugar, vanilla, and salt with the butter in the blender until batter is smooth. Pour over the apples in the skillet and bake for 15 minutes or until pancake is puffed and golden. Dust with confectioners' sugar and eat immediately.
