Ingredients

  • 1 onion, chopped
  • 1/2 lb. lean ground beef
  • 2 Tbsp. chili powder
  • 1 tsp. ground cumin
  • 1 can (19 oz/540 mL) black beans or kidney beans, drained
  • 1-1/2 cups each: instant white rice, tomato juice and frozen corn kernels
  • 1/3 cup each: chopped fresh cilantro leaves and grated Cracker Barrel Light Old Cheddar Cheese

Preparation

Step 1

BROWN onion and beef in large saucepan. Stir in remaining ingredients except cheese. Bring to a boil.


STIR in rice and cilantro. Cover; remove from heat and let stand 5 min.


SPRINKLE with cheese and cover and let stand until cheese melts.
