Aligator With White Wine Sauce
- Butter as needed
- 1 tablespoon oil
- 2 aligator fillets halved lengthways
- 2 shallots chopped
- 2 tablespoons cream
- 1 cup dry white wine
Melt a knob of butter with some oil in a frying pan and lightly cook the shallots.
Before the shallots brown, add the alligator fillets and turn up the heat.
Cook for 1 to 2 minutes while stirring and then add the wine. The liquid in the pan should be cooking intensely.
After 30 seconds, add the cream and season. Continue cooking and stirring so that the ingredients combine and reduce, approximately 30 seconds.
