- 4 lbs. boneless fresh brisket of beef
- 1 large onion, coarsely chopped
- salt and pepper
- flour
- water
- vegetables of choice, optional

Step 1
Wipe beef with dsmp paper toweling. Heat large heavy pot. Add meat. Brown on all sides without added oil. Pour off any fat. Sprinkle onion around meat. Cover tightly. Cook over low heat for 1 hour. Remove from heat. Keep covered and let meat cool to lukewarm. Transfer meat to cutting board. Slice across grain into attractive, uniform slices for serving. Return meat to pot. Sprinkle with salt and pepper. Cover and simmer for 1 to 2 hours longer or until tender, turning slices once. To make gravy, remove meat to warm, deep platter in closely overlapping fashion to keep meat hot. Skim off fat. Stir in a little flour blended with cold water. Cook over low heat, stirring, until thickened. Serve with roast. If vegetables are cooked with roast, put on top of meat slices during last 20 minutes of cooking time; sprinkle with salt and pepper.
