Shrimp-Egg Salad Sandwiches

These are great for parties when spread inside small rolls.

Ingredients
- 2/3 cup mayonnaise, divided
- 4 large hard-boiled eggs, chopped fine
- 1/2 rib celery, diced
- 1/4 cup chives, chopped
- 2 green onions, chopped
- 1/4 tsp Greek seasoning (or seasoned salt)
- black pepper to taste
- 2/3 cup finely chopped boiled shrimp
- rolls from bakery, cut in half

Preparation
Step 1
Stir together 1/3 cup mayonnaise and remaining ingredients, except for bread. Cover and let set in refrigerator overnight to let flavors mingle, for best results.
Spread cut side of rolls with remaining mayonnaise and fill with salad. Keep refrigerated.
