Ingredients
- 1 c. granulated sugar
- 1/2 c. shortening
- 1 1/2 c. flour
- 1 tsp. baking powder
- pinch of salt
- 1/2 c. milk
- 2 beaten eggs
- rind of a lemon
- 1/2 c. granulated sugar
- juice of the lemon

Preparation
Step 1
Cream sugar and shortening.
Sift together the flour, baking powder and salt. Add dry ingredients alternately with milk. Beat eggs and rind of a lemon and add to flour mixture.
Bake in 9 x 5 loaf pan and bake at 350 F for 45 minutes.
Take out of oven, poke holes in the top of the loaf and pour the sugar/lemon juice mixture over loaf.
Cool in loaf pan and then slide knife around sides to ease it out.
