Ingredients

  • 1 1/4 cup water
  • 1 TB olive oil or walnut oil
  • 1 1 pound box white bread mix for bread machines
  • 1 pkg yeast (included in mix)
  • 1/4 cup mayonnaise
  • 1/2 cup chopped scallions
  • 8 ounces (2 cups) grated Monterey Jack cheese
  • 1/2 cup canned green chiles, drained and chopped
  • cornmeal for sprinkling

Preparation

Step 1

1. Place all ingredients through yeast into bread machine in order suggested by manufacturer. Set for dough or manual cycle.

2. Line a baking sheet with parchment paper and sprinkle with cornmeal. When the bread machine finishes the cycle (beeps), turn the dough out onto a lightly floured work surface.

3. Pat into a 10 x 16 inch rectangle.

4. Spread the mayonnaise on the rectangle and sprinkle with the scallions. Sprinkle with the cheese and the green chiles.

5. Fold the two short ends of the dough into the center and bring up the two long ends to encase the filling. Pinch the seams to seal and place seam side down on the baking sheet.

6. Cover loosely with plastic wrap and let rise at room temperature for 20 minutes.

7. Preheat the oven to 375.

8. With a sharp knife, slash the top with 3 diagonal slashes deep enough to just expose the filling. Bake until golden brown, 30 to 35 minutes. Cool on the pan and serve at room temperature (let the cheese firm up). Slice with a serrated knife.
