Ingredients

  • 1/4 cup diced red pepper
  • 1/4 cup diced scallions green part only
  • 2 tsp minced garlic
  • 1 tsp minced fresh thyme
  • 2 Tsp olive oil salt pepper
  • Mash
  • 1 can black eyed peas drained rinsed and divided
  • 1 egg white
  • 1 Tbsp cornmeal
  • 1 tsp cornmeal
  • 2-3 dashes of Tabasco
  • prepared corn bread
  • Comeback Sauce
  • puree 1/4 cup chopped onion, 2 cloves of garlic, 1/4 cup of mayonnaise, 2Tbsp each of Worcestershire Sauce and lemon juice and 1 tsp of yellow prepared mustard. Season with Tabasco and black pepper. Can refrigerate up to 2 weeks.

Preparation

Step 1

Sweat above ingredients in 1 Tbsp of oil over medium heat for 3 minutes till soft season with salt set aside

mash 1 cup of peas and egg white until smooth add cornmeal, mustard, Tabasco remaining peas and pepper mixture. Form patties, chill 10 - 30 minutes.

Sautee in 1 Tbsp oil until browned 5 minutes each side high heat.

Place on corn bread top with comeback sauce and sauteed greens and tomatoes
