- 2 c. flour
- 4 tbsp. sugar
- 6 tsp. baking powder
- 1/2 tsp. salt
- Very warm water but not hot
- Oil
- Flour

Step 1
This make about 9 bannocks. Not good reheated. Recipe can be cut in half.
Mix dry ingredients toether, then add very warm water - enough to make a sticky dough. Dough should be shiny and paste-like.
Place about half a cup of flour into small mixing bowl. Wieth soup spoon, scoop a generous spoonful of dough into bowl of flower.
Coat dough with flour, using just enough so dough doesn't stick to your fingers. Gently shape into circle, patting lightly to flatten to about 1/4 inch thick.
When frying pan is hot, coat bottom with vegetable oil, then place dough into pan. Fry until risen and golden. Continue with remainder of the dough using more oil to coaat pan as needed. Bannock should be very light and not greasy.
Serve with butter and jam, or with soup or stew, or enjoy as a snack.
