Ingredients

  • 4 sticks Food Lion margarine (not butter)
  • 2 1/2 cups Cracker Barrel Extra Sharp cheddar cheese, 1 block
  • 4 1/2 cups Food Lion self-rising flour
  • 3 cups Rice Krispies
  • 1 t cayenne pepper
  • OR
  • 1/2 lb butter
  • 1/2 lb sharp cheddar
  • 2 cups plain four
  • 2 T sugar
  • 1 t salt
  • 2 cups Rice Krispies

Nancy Merryman's Cheese Cookies

Mix margarine and cheese into a paste, add in mixed dry ingredients slowly in a heavy duty mixer. You will need to mix by hand eventually and add more flour to desired consistency. Dough should be soft but not sticky enough to stick on hands. Roll into balls and place on a tray. Smash with a fork to flatten. Bake and watch edges. Enjoy!
Bake at 400 degrees for 6-6 1/2 minutes
Yield: 12 dozen or 144 cookies

OR

Michaele Autry Cheese Cookies

In food processor, using chopping blade, chop chunks of cheese until fine. Cream with chunks of softened butter until well-blended. Add flour, sugar and salt and process until dough ball is formed. Transfer to mixing bowl and work in Rice Krispies. Chill mixture for 30-45 minutes. Using teaspoon, form balls and flatter with hands.
Whole pecans can be used as garnish before baking.
Bake at 350 degrees for 10-15 minutes.
Yield: 4 dozen
