  • 1 3/4 lb. okra
  • 1 1/2 c. yellow cornmeal
  • 1/2 t. salt
  • 1/8 t. pepper
  • 1/2 c low-fat buttermilk
  • 1 large egg, lightly beaten

Step 1

Preheat oven to 450*.
Trim off stem ends of okra, cut into 1/2" slices. Combine cornmeal, salt, and pepper in medium bowl; stir mixture well, and set aside.

Combine buttermilk and egg in large bowl; add okra, stirring to coat. Let stand 10 minutes. Drain and dredge okra in cornmeal mixture. Place okra on a baking sheet coated with Pam. Bake at 450* for 40 minutes or until crisp, stirring occasionally.
