Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup sweetened shredded coconut
  • 1 1/2 sticks butter, room temp
  • 1 1/2 cups sugar
  • 2 eggs plus 2 egg whites
  • 1 1/2 tsp vanilla
  • 1/2 cup milk
  • 1/4 c lime juice
  • 1 tbsp lime zest

Step 1

Preheat oven to 350.
Pulse coconut in food processor until fine. Whisk together flour, baking powder, salt, and coconut. Beat butter until fluffy, then add sugar and beat well. Add eggs and egg whites gradually, mixing well after each. Add flour, alternating with milk, in 3 parts. Add vanilla, then lime juice and zest. Mix until incorporated.
Scoop into cupcake pans, bake 15-18 minutes.
