Ingredients

  • 2 egg whites
  • 1 Tablespoon of Water
  • 1/8 tsp garlic powder
  • 1/2 cup dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 1/2 teaspoons Italian seasoning --we buy the bread crumbs with the season, but we still add a little more
  • 4 (4 oz) boneless skinless chicken breast halves
  • 1 Tablespoon olive oil, divided
  • 4 (1 oz) slice mozzarella cheese
  • 1/2 cup pizza sauce, heated

Step 1

Pound the chicken thinner (put it in a Ziploc bag and punch it until it gets thinner) and cut it into smaller strips, it helps to keep the breading on.

Whisk the egg whites and water in a medium mixing bowl until foamy. Stir in the garlic.

Mix the bread crumbs, Parmesan cheese, Italian seasoning in a shallow dish. **Usually either 1 1/2 times or double the recipe for the bread crumbs and egg mixture.**

Dip the chicken in the egg white mixture. Coat with the crumb mixture, shaking off the excess. Dip each piece again in the egg white and then the crumb mixture.

Heat 1 1/2 teaspooms of olive oil (can just pour it in). Add the chicken. Cook for 4 minutes or until golden brown. Add remaining 1 1/2 tsp olive oil. Turn chicken.

We keep turning chicken until done in center.

Top each chicken with 1 slice of mozzarella cheese and melt.

Serve with spaghetti noodles and pizza sauce.
