Ingredients
- 1 cup canning salt
- Onions
- 2 Bay leaves
- 1 1/2 cups white vinegar
- 2 1/2 tsp pickling spice
- 1 tsp black pepper
- 1/2 tsp whole all spice
- 3 cloves garlic
- 2 cups sugar
- 1/2 cup white wine

Step 1
1 cup canning salt to 1 gallon water. Soak for 48 hours. Wash off well, drain, then cover with white vinegar for 24 hours. Drain. Fill jars with layers of onion and fish. Boil Bay leaves, white vinegar spices. Put all spices in a tied piece of cloth before you boil. Let cool completely, then add white wine. Pour over fish in jars. Let stand in refrigerator for 1 week before eating them.
