Ingredients

  • 22 medium baby bella mushrooms (2 packages fresh)
  • 1/4 C minced yellow onion
  • 2 C fresh baby spinahc (wilted, then minced)
  • 1/8 C minced sweet pepper
  • 2 tsp minced garlic
  • 1/2 C italian bread crumbs
  • 3/4 C grated parmesan or romano cheese
  • Onion powder, onion salt and garlic salt to taste

Preparation

Step 1

1. Pre heat oven to 400.

2. Wilt spinach in the microwave for 2 minutes.

3. Remove stems from mushrooms and set aside.

4. Mince spinach, mushroom stems, onion and red pepper.

5. Add garlic, bread crumbs and cheese to the veggies.

6. Mix together well. Add water to moisten, if needed.

7. Add onion powder and onion salt to taste.

8. Fill mushrooms with the mixture and round tops off.

9. Bake 20 minutes at 400.
