  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 1/2 cups rolled oats
  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 Tbsp honey
  • 2 tsp vanilla
  • 1 1/3 cups fried cranberries
  • 1 cup white choclate chunks

Preparation

Step 1

1. Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper; set aside. In a medium bowl, combine flour, baking soda, salt, and cinnamon. Stir in oats; set aside.

2. In a large mixing bowl, beat butter with an electric mixer on medium speed for 30 seconds. Add brown sugar and granulated sugar; beat until combined, scraping side of bowl. Beat in eggs, honey, and vanilla until combined. Beat in as much of the oats mixture as you can with the mixer. Stir in the remaining oats mixture. Stir in cranberries and chocolate chunks.

3. Drop dough by heaping tablespoons 2 inches apart onto prepared cookie sheet. Bake for 9 to 11 minutes. Let cool on cookie sheet for 5 minutes. Transfer to a wire rack and cool completely.
