Ingredients
- 112 g Spanish Chorizo
- 150 g frozen scallops
- 1 red onion, roughly chopped
- 1 red pepper, finely sliced
- 1 courgette, sliced
- 2 x 125g packs of Golden Vegetable Savoury Rice
- 40 g frozen peas

Preparation
Step 1
Fry red onion for a couple of minutes in Fry Light, then Golden Vegetable Savoury Rice. Add 800 ml water, then turn to a low heat and cook for approximately 15 minutes until the rice is tender.
Meanwhile, cut chorizo into pieces and fry in a separate pan until it starts to become crispy. Add scallops, courgette, and 1 red pepper, deseeded and finely sliced. Heat through for a few minutes.
Once the rice is cooked, add to the pan with the chorizo and prawns and combine.
Add the frozen peas, then warm through and serve immediately.
