Ingredients

  • 2 cups peanut butter
  • 1 1/3 honey
  • 1 cup coconut oil (no substitutes)
  • 4 cups oats (not instant)
  • 2 1/2 cups mini chocolate chips
  • (8 oz = 1 cup) I use 2 bags of giradelli chocolate chips, but
  • Hershey brand works great too.
  • (DON'T USE MILK CHOCOLATE---USE DARK CHOCOLATE)

Preparation

Step 1

In large mixing bowl, melt together peanut butter, honey, and coconut oil. (melt in microwave for about 2 minutes)

Remove from microwave and add chocolate chips--mix together until chips are melted then add oats and mix together.

Spread into a 9 x 13 pan lined with wax/parchment paper. Refrigerate until hardented (about 2 hours).
After refrigeration, take candy out of pan and remove wax paper.
Cut into squares and store in refrigerator.
