Ingredients
- 4-5 large potatoes, peeled and chopped
- Handful of fresh parsley
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 2 celery stalks, finely chopped
- 1 large carrot, finely chopped
- 400 g extra-lean minced beef
- 400 g can chopped tomatoes
- 142 ml/ 1/4 pint beef stock
- 1 tbsp beef Bovril concentrate
- 1 tsp dried oregano

Preparation
Step 1
Boil the potatoes until tender, drain and mash. Add the parsley. Season and set aside.
Heat a non-stick frying pan over high heat. Add onion, garlic, celery, carrot and beef and fry 6-8 minutes. Stir in tomatoes, beef stock, Bovril, and oregano. Bring to a boil, reduce heat to low and cook for 25-30 minutes, stirring frequently.
Preheat oven t0 200C/400F. Transfer filling to a small ovenproof dish and top with the mash. Comb the mash with a fork. Bake 25-30 minutes until lightly browned.
