Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup firmly packed light brown sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 3 1/2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 cup vegetable oil
  • 1 cups oats
  • 1 cup crushed cornflakes
  • 1/2 cup flaked coconut
  • 1/2 cup chopped pecans

Preparation

Step 1

Preheat oven to 325. Beat butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well. Beat in egg and vanilla

Combine flour, baking soda and salt. Add flour mixture to butter mixture alternately with oil. Stir in oats, cornflakes, coconut and pecans.

Drop by tsp. ( or use a small ice cream scoop) onto ungreased baking sheets. Dip fork in water and press down on each cookie.

Bake for 10-12 minutes or until brown. Let cool on pan for 1 minute; transfer to paper towels to drain. Store in an airtight container. These cookies do not freeze well
