Macacroni & Cheese (Shelly's)

Ingredients
- 1-1/2 cups of uncooked noodles
- 1/4 c. butter
- small onion
- 1/2 t. salt
- 1/4 t. pepper
- 1/4 c. flour
- 1-3/4 c. evaporated milk
- 8 oz. velveeta cheese

Preparation
Step 1
Cook macaroni and drain. Cook and stir butter, onion, salt and pepper over medium heat until onion is tender. Stir in flour. Cook over low heat stirring constantly until mixture is smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling stirring constantly. Boil and stir 1 minute. Remove from heat. Stir in cheese until melted. Combine noodles and cheese sauce. Place in 1-1/2 quart ungreased casserole dish. Bake uncovered at 375 for 15 mins.
Topping:
Melt 1 stick of butter. Mix in 2 teaspoons of paprika and 1/1/2 - 2 cups of soft bread cubes until coated with butter. (Martin's potato bread has these cubes - Giant has them.) Add topping to casserole then bake for 15 additional minutes.
