St. Anselm's Garlic Steak
BA Staff Pick: Scott DeSimon, Special Projects Editor: "The Garlic Steak at St. Anselm in Brooklyn doesn't sound like much, but talk about a dish being an overachiever."
While Scott DeSimon chose this recipe, a critical mass of BA editors have ordered this steak at St. Anselm and come to work the next day raving about it. We're happy to report that it's extremely easy to make at home. The key is the garlic-infused clarified butter, which is equally delicious when the garlic is subbed out for shallots, fresh rosemary, or any other herb you might have on hand. In fact, the butter is so versatile that you'll want to drizzle it over seared scallops, grilled shrimp, and steamed artichokes, too.

Preparation
Step 1
Preparation
Build a medium-hot fire in a charcoal grill, or heat a gas grill to high. Season steak generously with kosher salt and pepper. Melt butter in a small skillet over medium heat until foamy. Remove skillet from heat. To clarify the butter, use a spoon to skim foam floating on surface of butter; discard foam. Add garlic to clarified butter and let it infuse while the steak is cooking and resting.
Grill steak, turning once, until cooked to desired doneness, about 5 minutes per side for medium-rare. Transfer steak to a cutting board and let it rest for 10 minutes. Thinly slice steak against the grain. Divide steak between plates and spoon garlic butter over top. Season with sea salt and garnish with parsley.
