Green Bean Casserole with Mushroom Sauce

To blanch the beans: cook in boiling water for 2 minutes then immediately transfer to an ice bath to cool

Ingredients
- 12 oz blanched green beans
- 2 T canola oil
- 3 cups fresh sliced mushrooms
- 1/2 cup chopped onion
- 1 T flour
- 1 cup unsalted chicken stock
- 2 T heavy cream
- 1/2 t black pepper
- 3/8 t kosher salt
- 1/4 cup whole wheat panko
- 3 T grated parmesan cheese

Preparation
Step 1
Place blanched beans in a 11 x 7 baking dish
Heat the oil in a large skillet over med-high heat. Add the mushrooms and onion and cook until browned, about 6-8 min
Add the flour and cook, stirring constantly, 1 min
Add the chicken stock, cream, pepper, and salt. Cook, stirring until thick and smooth, 1-3 min
Spoon sauce over the beans
Sprinkle with the panko and parmesan cheese
Spray with cooking spray and broil until golden brown, 1-2 min
