- 1 lb whole wheat elbow macaroni or ziti
- 1 pint cottage cheese
- 2 large eggs
- 1/4 cup milk
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 cups (12 oz) shredded sharp Cheddar
- 1 cup fresh whole-grain breadcrumbs
- 2 tablespoons unsalted butter, melted, plus more for the baking dish

Step 1
1.Preheat the oven to 350°F. Butter a 9 X 13-inch baking dish.
2.Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package directions until tender. Drain well.
3.Combine the cottage cheese, eggs, milk, mustard, salt, and pepper in a food processor or blender and process until smooth.
4.Transfer to a large bowl. Add the macaroni and cheese and mix well. Spread in the baking dish.
5.Toss the breadcrumbs with the butter. Sprinkle over the macaroni.
6.Bake until the sauce is bubbling and the crumbs are golden brown, about 25 minutes. Serve hot.
