Ingredients

  • 1 cup unsalted butter; softened
  • 1 cup sugar
  • 3 eggs
  • 6 egg yolks
  • 1 tsp almond or vanilla extract
  • 3/4 cup sifted flour
  • 1/2 cup yellow cornmeal
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 Tbs lemon zest (1 lemon makes 1 tbs)

Preparation

Step 1

Cream butter and sugar; add eggs one at a time, whipping until fluffy. Repeat with egg yolks. Add extract. Blend flours together and fold into wet mixture. Pour into 2 buttered and cornmeal-coated, 10 inch pans; bake at 350 degrees for about 30 minutes.

Alternate recipe: using apples (gala, golden delicious, pippins, romes) - 4 per cake. Cut into 1/4 wedges and layer bottom of pan. Pour batter on top and bake as above. Dust with confectioners sugar before serving.
