Ingredients

  • 6 medium green bell peppers
  • 6 oz. (about 2 links) mild Italian turkey sausage
  • 1 lb. lean ground turkey
  • 1 cup cooked brown rice
  • 1/2 cup diced onion
  • minced garlic to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/2 tsp.dried oregano
  • 2 tbsps. grated Parmesan or Romano cheese
  • 1/4 cup Italian breadcrumbs
  • 1 large egg
  • 1/2 tsp. black pepper
  • 1 (26 oz.) jar marinara sauce
  • 1/4 tsp red pepper flakes

Step 1

Cut the tops off peppers and dice the tops inso small pieces. Set aside. Core, stem and seed the peppers.
Remove casings from the sausages and place sausages into a large bowl. Add the next 11 ingredients (turkey through black pepper), 2 tbsps. Marinara sauce andhalf the reserved diced pepper tops. Using your hands, gently mix the ingredients. Stuff the peppers with the meat mixture and place peppers upright in a 4 quart or larger slow cooker. It's ok to stack the peppers.
Add the red pepper flakes to the remaining marinara and pour it over the peppers. Add 3/4 cup water to the sauce jar and pour into a 4-6 qt. slow cooker. Toss in the remaining chopped pepper. Cook for 3-4 hours on high or until the peppers are tender, but not mushy. Remove peppers and serve topped with sauce.
