Ingredients
- Marinade:
- 4-6 skinless, boneless breasts cut into 1 inch cubes
- 4 tablespoons lemon or lime juice
- evoo for brushing
- 8 wooden skewers (soaked in water)
- 1 cup coconut milk
- 4 cloves garlic, crushed
- 2 inches of fresh ginger, grated
- 1 tbs ground cumin
- 1 tbs chili powder
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1 teaspoon cardamom

Preparation
Step 1
Place chicken in non metal bowl, & sprinkle with lemon juice. Toss and set aside for 10 minutes.
Make marinade by combining all marinade ingredients in a small bowl.
Thread cubes of chicken onto pre-soaked skewers. Brush marinade onto chicken, cover and refrigerate at least 2 hours (ideally overnight).
Cook skewers on a grill lightly coating with oil as you turn so they don't stick. Turn frequently and cook about 15 minutes or until cooked through.
