Ingredients

  • Topping:
  • 1 1/2 cups boiling water
  • 1 cup quick cooking oatmeal
  • 1/2 cup Crisco
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1 1/3 cups flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 stick butter
  • 1 cup brown sugar
  • 1 egg, slightly beaten
  • 1 cup chopped pecans
  • 1 cup coconut, optional

Preparation

Step 1

Pour boiling water over oatmeal. Set aside.

In mixing bowl, cream shortening and sugars. Add eggs, 1 at a time, and then add vanilla. Sift together flour, cinnamon, baking soda, and salt. Add to sugar mixture. Add oatmeal and mix.

Place batter in a 9x13 pan, sprayed with Pam. Bake 30 minutes at 350. In the meantime, Heat topping ingredients until sugar is dissolved.

Take cake from oven, add topping, and return to oven for 20 minutes more.
