Looking for a baking mix that you can use to make pancakes, waffles, muffins, biscuits and more with? One that doesn’t come in a box with a lot of ingredients that you can’t pronounce let alone know what they mean without the expert help of google (but don’t google medical conditions it will scare the bleep bleep bleep out of you just trust me, apparently I have many incurable diseases – gasp)? We have a homemade version that dare I say tastes better than any boxed version (in my opinion of course). After lots of testing and tweaking over the years we have a homemade version that we can’t be without. It takes literally 5 minutes tops to mix up and then you simply store it in the refrigerator so it’s ready to go when you are. Time saving, delicious and budget friendly. What more can you ask for? Well besides having someone make it for you.

There are many uses for this homemade mix more often than not we use it to make pancakes. My kids are pancake fiends. They would eat them Every. Single. Day. We like them fluffy and stacked a mile high, just like those

pictured below. Yes, if you’re wondering they were indeed made using this homemade baking mix.

The mix is made using simple pantry ingredients that I’m betting you probably already have on hand in your pantry. Just remember, when you do mix it up, be sure you store it in the refrigerator because of the butter. Yes, butter which, when cooking melts from the inside creating the most buttery delicious pancakes imaginable. Now if you’ll excuse me I’m going to have to go make myself a batch of pancakes to cure this craving.

TIP: To make the fluffiest pancakes you’ll need: 2 cups homemade baking mix, 1 1/2 cups whole milk, 1 egg. Mix together. Pour 1/4 cup of batter onto a hot griddle. Flip and enjoy.

Homemade Baking Mix

Place flour, sugar, salt, baking power and baking soda into a large mixing bowl. Whisk to combine.

Add butter. Using a pastry cutter, cut in butter until it's incorporate into mix.

NOTE: mixture will keep up to 4 weeks in the refrigerator.

I love being able to make “homemade” EVERYTHING! I’ve been slowly learn to make things like this at home instead of having to use the boxed mixes! I’ll have a stash of this in the fridge in no time!

I love that this mix includes butter! I’ve never seen that before but it makes total sense. All those things are better with butter!

You have answered my prayers as I keep thinking I should make a baking mix to have on hand for pancakes and waffles, because I am too lazy to measure out every time. I have a recipe for a pre made corn meal griddle mix which we love but sometimes basics are too darn good!
