Applesauce Bread/Muffins

Ingredients
- 4 large eggs, at room temperature
- 1 1/2 c. granulated sugar
- 3 c. applesauce, at room temperature
- 2 sticks unsalted butter, melted and slightly cooled
- 3 c. flour
- 1 tbsp. baking soda
- 1 tsp. kosher salt
- 1/2 tsp. ground cinnamon

Preheat oven to 350 degrees. Lightly butter 2 standard-size loaf pans or place paper liners in 24 muffin tins.
Place the eggs and sugar in the bowl of a mixer fitted with a paddle and beat until lemon-colored and thickened, 2 to 3 minutes.
Add the applesauce and butter, beating well and scraping down the sides of the bowl before each addition. (The mixture will break, and while you may think you've ruined it, just keep on going, everything is fine. it just looks sort of gritty.) Place the flour, baking soda, salt, and cinnamon in a separate bowl and mix well. Add to the applesauce mixture and beat to combine. Scrape down the sides of the bowl.
Pour into the prepared pans, or using a 2-oz. ice cream scoop or heaping tablespoon, fill the prepared tins. Transfer to oven and bake until golden brown and firm in the center, about 1 hour for the breads and 20 to 25 minutes for the muffins. Let cool in the pan 5 minutes, then transfer to wire rack and set aside to cool.
