Ingredients
- 1 package fully cooked chicken sausage sliced thin
- 2 cloves garlic, crushed
- 1/4 cup olive oil
- 1 large red bell pepper, sliced thin
- 1 small onion, sliced thin
- 1 package frozen broccoli, thawed
- 1/2 cup reduced sodium chicken broth
- 1/2 cup tomato sauce
- 2 cups instant rice
- 1/2 cup shredded mozzarella cheese

Preparation
Step 1
Heat olive oil and garlic in a skillet. Stir in the sausage and cook until browned. Add pepper, onion, broccoli, broth and tomato sauce and simmer 10 minutes until the vegetables are tender and liquid is absorbed. ( my liquid never absorbed, I drained it ) In the meantime, prepare the rice according to package directions. ( I made rice in my rice cooker ). Stir rice into skillet, sprinkle with cheese and serve.
