Ingredients

  • Dry Ingredients:
  • 1 c. flour
  • 3 T sugar
  • 1/2 t. salt
  • 1 t. baking powder
  • 1/4 t. baking soda
  • 2 T dark cocoa powder
  • Wet Ingredients:
  • 1 egg
  • 3 T melted butter, cooled
  • 3/4 c buttermilk
  • Red food coloring
  • 1 t vanilla
  • 1/4 c creme fresh (sour cream)
  • Mascopone Spread:
  • 1/4 c creme fresh
  • 1/2 c mascapone cheese
  • 2 T sugar
  • 1/2 t. vanilla
  • Lemon Zest

Preparation

Step 1

Mix all dry ingredients together. Mix all wet ingredients together. Mix wet into dry just until blended and no lumps.

Stir together all ingredients in mascopone spread. Set aside.

Heat griddle on medium low heat. Spray pan, then immediately add 3/4 c, pancake batter. Flip when bubbles start forming in center of pancake.

When done, drizzle with syrup and top with spoonful of mascopone spread.
