Use any boxed cupcake mix. Layer with vanilla bean filling and top with chocolate-sour cream frosting. Very tasty if you add sliced strawberries to the filling.

Ingredients

  • Vanilla Bean Cupcake Filling:
  • 1 3.4-oz box French vanilla pudding
  • 1 cup milk
  • 1 cup whipping cream
  • 1 Tbsp vanilla bean paste
  • Chocolate-Sour Cream Frosting:
  • 2 cups semisweet chocolate pieces
  • 1/2 cup butter
  • 1 (8-oz) carton dairy sour cream
  • 4 1/2 cups powdered sugar

Preparation

Step 1

Vanilla Bean Cupcake Filling:
1. Prepare pudding according to package directions, but instead of 2 cups milk, use the 1 cup milk and 1 cup whiping cream. Add vanilla bean paste and mix well.

2. Chill for at least 20 minutes before using as a filling for cupcake.

Chocolate-Sour Cream Frosting:
1. In a large saucepan, melt chocolate pieces and butter over low heat, stirring frequently. Cool for 5 minutes. Stir in sour cream.

2. Gradually add powdered sugar, beating with an electric mixer on medium speed until smooth.
