Ingredients
- 3 lbs. cut-up chicken parts
- 3 tablespoons Oil, divided
- 4 medium Carrots (2 cups)
- 4 Celery stalks, (2 cups)
- 1 heaping teaspoon Garlic
- Salt and Pepper
- 1 lb.Italian Pitted Green Olives
- 3/4 cup White Vinegar
- 3/4 cup Water
- 1 tablespoon Capers

Step 1
Cut up chicken parts into small pieces. Wash, pat dry with paper towel. Add 2 tablespoons oil and 1 teaspoon salt to frying pan. "Flash Fry" chicken until brown on all sides. Place chicken in large saucepan. Discard oil.
Using 1 tablespoon oil, saute sliced carrots and celery, garlic, salt and pepper until soft. Add pitted olives and capers to vegetables and mix.
Dump mixture on top of chicken. SHAKE PAN, NEVER STIR is the secret to this recipe. Add 1/2 glass white vinegar and 1/2 glass water. Cover and bring to a boil and simmer for 1 1/2 to 2 hours until chicken is tender.
