Ingredients
- 1/2 C . shortening (Crisco)
- 1 C. sugar
- 2 C. sifted flour
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 tsp. Pumpkin pie spice
- 1 C. chopped nuts
- 1 C. raisins
- 1 C. Persimmon pulp (approx. 4 Persimmons) very ripe
- 1 egg

Preparation
Step 1
Cream shortening & sugar.
Add dry ingredients, sifted with pumpkin pie spice.
Add nuts & raisins.
Mix the pulp and egg together, then add to mixture.
Drop onto greased cookie sheet. (Ice cream scoop size makes approx. 1 1/2 dozen cookies)
Bake at 375 for 20 min.
