Ingredients
- 2 tablespoons olive oil add to shopping list
- 2 large portobello mushrooms, sliced, slices cut in half
- 1 pound large shrimp (thawed, if frozen), peeled, deveined, and rinsed
- 1 pound asparagus, trimmed and cut into 1" pieces
- salt
- ground black pepper
- lemon or lime wedges, for serving

Step 1
1. In a large, deep nonstick skillet over medium-high heat, warm the oil. Add the mushrooms and cook, stirring often, about 5 minutes, or until tender and lightly browned.
2. Add the shrimp. Cook, stirring, 1 minute. Add the asparagus and season to taste with salt and pepper. Continue to cook, stirring often, about 4 minutes, or until the shrimp are pink and opaque in the thickest part, and the asparagus is crisp-tender. Serve with the lemon or lime wedges.
3. Serve iver rice or pasta
