Chinese Chicken "Lollipops"

Ingredients
- Combine:
- 3 pounds chicken drummettes
- 2 cups panko crumbs
- 2 tablespoons sesame seeds
- 2 tablespoons unsalted butter, melted
- 1 teaspoon kosher salt
- 1/4 teaspoon toasted sesame oil
- 1/4 teaspoon cayenne
- Whisk together:
- 2 eggs
- 2 tablespoons mayonnaise
- 1 tablespoon chili sauce
- Serve with barbeque sauce

Step 1
Preheat oven to 425 degrees with the racks in the lower third.Coat two baking sheets with nonstick cooking spray.
Prepare chicken: Using kitchen shears, snip the tendons around the top of the drummette. Clean off the top of the bone. Scrape the meat to the base of the drummette with the back of a paring knife. (Be sure to scrape the bone clean or the meat will creep back up.)
Combine: panko, sesame seeds, butter, salt, sesame oil and cayenne in a bowl.
Whisk: eggs, mayonnaise and chili sauce together in another bowl.
Dip the chicken in egg mixture, then dredge in crumbs, coating on all sides. Place on prepared baking sheets and bake 40 minutes, turning chicken over after 20 minutes. When done the drummettes should be golden and crisp all the way around.
For the sauce: Saute a finely diced onion. Add what's remaining of the bottle of chili sauce, as well as a small bottle of barbeque sauce. (I used Open Pit.)
