Ingredients
- 2 pounds yellow squash
- 2 medium onions
- 1 egg
- 10 whole wheat saltine crackers
- 1/2 stick butter

Step 1
Cut squash in small pieces and dice onions. Cook both squash and onions in salted water, about 15 minutes or until soft. Mash. Add butter and crushed crackers to squash and onions. Taste test before adding the egg. Season with salt and pepper as needed then add the egg. Bake in a casserole dish between 375 and 400 degrees for about 30 minutes or until hot and bubbly. Remove and top with crackers and dotted butter and return to oven until crackers are browned and butter is melted.
