Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup chopped dill
  • 4 teaspoons Dijon mustard
  • 2 teaspoons lemon juice
  • salt & pepper to taste
  • 4 slices pumpernickel rye or egg bread, toasted
  • 1 pound pre-cooked shrimp,
  • rinsed, patted dry, & chopped
  • 4 Bibb lettuce leaves
  • 8 thin slices of cucumber
  • garnishes of choice such as
  • lemon slice, tomato wedge, sprig of dill

Preparation

Step 1

Mix the first 5 ingredients. Spread 1 Tablespoon of the mixture over each slice of bread. Mix the shrimp with the remainder of the dressing mixture. Place 1 lettuce leaf on each slice of bread, add 2 slices of cucumber, and top with shrimp mixture.
