Ingredients

  • 1 lb lean beef chuck, trimmed and cut into 3/4 inch cubes
  • 1 (15 1/2 oz) can pinto beans, rinsed and drained
  • 1 (14 1/2oz) can petite diced tomatoes
  • 1 1/4 cups reduced sodium beef broth
  • 1 onion, finely chopped
  • 2 tablespoons cornmeal
  • 1 jalapeno pepper, seeded and minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon anise seeds, crushed
  • 1/4 teaspoon cayenne pepepr
  • 1 cup lightly packed frehsh cilantro leaves

Preparation

Step 1

1. Combine all ingredients except cilantro in slow cooker. Cover and cook until beef is fork tender, 4-6 hours on high or 8-10 hours on low. Stir in 3/4 cup of cilantro. Serve sprinkled with remaining cilantro.
