  • 30 ml corn oil 2 tbsp
  • 4 green peppers 4
  • 500 g monterey jack cheese, cut into 8 sticks 1 lb
  • 3 egg whites 3
  • 75 ml all purpose flour 1/3 cup
  • 3 egg yolks 3
  • 50 ml all purpose flour 1/4 cup
  • salt & pepper to taste 1/4 cup
  • salsa sauce -

Brush peppers with oil, arrange on a cookie sheet and cook in preheated 425 F (220 C) oven for 15 to 20 minites or until they start to blacken. Remove and place in a paper bag. Let cool.
Peel peppers, remove ends and cut lengthwise to separate, removing seeds. Place a cheese stick in each pepper half and roll closed.

In a bowl; beat egg whites until stiff and gradually add 1/3 cup (80 ml) of flour. Whisk egg yolks and gently fold into egg whites with a spatual to make batter.

On a plate; mix 1/4 cup (60 ml) of flour, salt and pepper. Coat pepper pieces with this mixture, then with batter and fry in a frying pan with a small of amount of oil until golden brown. Drain on paper towels. Serve with your favourite salsa sauce.
