Ingredients

  • 1-1/2 cups and 2 tablespoons uncooked elbow macaroni
  • 1/3 cup and 1 tablespoon mayonnaise
  • 1 tablespoon and 1-3/4 teaspoons distilled white vinegar
  • 1/4 cup and 1 teaspoon white sugar
  • 1 tablespoon prepared yellow mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3/8 large onion, chopped
  • 3/4 stalk celery, chopped
  • 3/8 green bell pepper, seeded and chopped
  • 1 tablespoon and 1-3/4 teaspoons grated carrot (optional)
  • 2-1/2 teaspoons chopped pimento peppers (optional)

Preparation

Step 1

Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Rinse under cold water and drain.

In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, celery, green pepper, carrot, pimentos and macaroni.

Refrigerate for at least 4 hours before serving, but preferably overnight.
